Bigger, bolder and more brash than our favoured Motor Mouth IPA, the Duchess rules the roost and adds a funky tartness to the family. Left to rest on Brettanomyces wild yeast for a year and a half until it began to show the trademark fruity and hay like notes commonly associated with it, a bevy of citrus, pineapple, and passion fruit aromas meld into tropical flavors that pair nicely with the beer’s boldly hopped body.
A touch of coloured malt brings a sunset orange hue & subtle grainy character into play arranging balance amongst the floral barrage of Galaxy & Enigma hops, with flavors of freshly baled hay and pineapple tying everything together. A brett aided oaky earthiness, attributed to the barrel, finishes a mix of pleasant bitterness and tropical fruit, that only compliments an already complex and decadent beer.
The flavor from Brett gives it legs to stand alongside earthy produce like potatoes, root vegatables or pan fried mushrooms. Cheese - the stinkier the better.
