Once a year, hop farmers swing into full gear to harvest hops in the peak of season, strip the flowers from the bines, and then immediately freight them to breweries to brew wet hop beers. Fortunately, as we grow our own hops, we remove the freighting option and throw them as rapidly as we can into the brew for pure freshness.
This is Buffalos' story.
Starting with a our Estate malt, Buffalo is a 3-part act with the hops being the star of the show swinging wildly above a safety net of its soft malt backbone & elegant yeast character; we cranked it up to eleven by adding in 6kgs per H/L of fresh Estate Super Pride, Pride and Cascade wet hops, creating a complex profile of under ripe melon, citrus peel, and passion fruit, with notes of grapefruit and guava. A slick and chewy body carries the slightly grassy wet hops from start to finish, bridging the normally intensely bitter Super Pride hops with a uniquely bright apricot character of their freshly harvested state, shifting mid palate to vibrant citrus pith, finishing with a sherbet-like tropical juice character.
Enjoyed on its own as a liquid dessert or unashamedly accompanied with a chocolate pudding, poured liberally over vanilla ice cream or suggestively served with a cheese platter.
