Access to world class fruit with close proximity to our brewery isn’t a problem, we’re almost spoilt for choice, and when we were offered a plethora of fresh, super juicy & almost overripe blackberries, how could we refuse?
Bramble is a beautiful, yet tenacious, wild ale fermented with a French Saison yeast on these fresh blackberries for 18 months in ex-Chardonnay oak barrels.
Aromas of summer fruit, damp oak and long-stored hay permeate from the tulip with a delicate audacity and reflective of where these fruit were grown. The first sip reveals the Blackberry fruit character as it dances across the palate, paving a clean road for the barrel-induced funk to drive down. Lots of complex notes of horse blanket, citrus blossom, and dried grass dance across this effervescent and spritzy fruited ale, leaving a long and slightly drying palate in its wake.
Rustic beers call for rustic foods, and French provincial cuisine is a great choice such as a simple roasted chicken with garlic and herbs. An equally superb pairing are delicious creamy, bloomy-rind cheeses, or even slightly funkier options.
